Thinking outside the crouton box


We were heading out of town the next day and had half of a pan of cornbread that was going to go to waste if we didn't use it. Our dinner didn't exactly scream for cornbread though. My solution was to cube the cornbread, toss it with a couple tablespoons of butter and bake them in a 400 degree oven until toasty on the outside. Genius. I believe those little cornbread croutons were the favorite part of our whole supper. I know I am going to hear about it on Food Network now and it will be on those scarce reservation restaurants in the days ahead. And you can say you saw it here first.
