I had potatoes to cook but could NOT bring myself to turn the oven on to do my standard roasting. There is a BBQ joint here that has this fabulous potato salad so I thought I would try and imitate it. It turned out really nothing like it, but still fabulous. Mason said they were the best mashed potatoes I had ever made. It wasn't mashed potatoes at all, but whatever...
And just to warn you - this is NOT diet food.
White Potato Salad (serves 6)
1 lb of red potatoes (do not use baking potatoes. you need the waxy ones.)
1 rib of celery chopped finely
1/2 onion chopped finely
1/2 lb bacon cooked
3 hard boiled eggs diced
1/2 c mayo
1/2 c sour cream
1. Boil your potatoes in salted water. (I cooked my potatoes and eggs at the same time, in the same pot to save a step and a dirty dish.)
2. Cook and crumble your bacon. (I cooked mine in the oven. I also placed the onion on the cookie sheet with it so that it wouldn't be raw in the salad. Another step to save a dirty dish.)
2. Mash your potatoes. Stir in celery, onion, eggs, bacon, mayo, and sour cream. S&P to your taste.
Honestly, I am usually a traditional southern mustard potato salad kind of girl, but this recipe may have changed everything. I might just use this recipe from here on out. It's just that good.
